Chicken Parmesan

So, this is actually Chicken Parmesan without the tomato sauce and the noodles. This is the one they sort of teased in a mayo commercial. It looked tasty in the commercial, so I wanted to try it. But, I also wanted to try using Greek yogurt in place of the mayo.

I can’t decide if I liked this. The chicken was juicy, but this was just different. The Greek yogurt layer was tangy, but not crunchy and it didn’t really seep into the chicken. Still trying to figure this out. Ever had a recipe perturb you like this? I still have leftovers, so they might taste better second go round.

Update: After reheating the leftovers, the tang was lessened. Tasted maybe a bit better.

4-6 chicken breasts
1 cup Greek yogurt or mayo
1/2 cup-2/3 cup shredded Parmesan cheese
Salt, pepper and garlic powder

Heat the oven to 375 degrees. Clean up the chicken breasts and then season with the salt and pepper.

Mix together Greek yogurt, parmesan cheese and then season it a bit more with salt, pepper and garlic powder.

Slather the chicken with the yogurt mixture and then sprinkle more cheese on top. Then stick it in the oven for about 45 minutes.

Pull it out of the oven and you’re ready to eat. I served it with a large side of broccoli.
