I grew up making this very simple recipe. It’s amazingly tasty and so easy.
2 cups of BBQ sauce (I use original Open Pit)
1 can of tomato sauce
4-6 chicken breasts
salt and pepper
Preheat oven to 350 degrees. Mix together the BBQ sauce and the tomato sauce. Pour a thin layer into a 9×13 dish to coat the bottom. Trim the fat from the chicken and then place on top of the layer of BBQ sauce. Sprinkle the top of the chicken with salt and pepper.
Pour the rest of the BBQ sauce mixture over the chicken. The chicken should technically be drowning in the sauce, covered entirely.
Stick it the pan in the oven and bake for an hour. Pull the dish out of the oven and then make sure you flip the chicken over. You will notice, the chicken does shrink.
There will be a lot of sauce left over. What do I do with it? I don’t discard it. No. I usually make a batch of BBQ Mac and Cheese. What’s that? Well, regular mac and cheese and then you put the BBQ sauce on top and stir. I also do BBQ rice, white rice mixed with the sauce.
I am also a wimp when it comes to spicy foods. Mild is usually too spicy for me. So I always eat this with milk.
